Tradition and Passion for the Pistacchio Verde di Bronte P.D.O.

Ours is a farm that, for generations, has dedicated itself with passion and expertise to the cultivation and production of the renowned Pistacchio Verde di Bronte P.D.O., also known as the “Green Diamond of Etna”.

Led by Nunzia Schilirò, our family has made love for the land and the valorization of a unique product in the world its mission, offering excellence and quality.

Located in the picturesque district of “Mazzappello Malagà”, our company operates on land of lava origin, ideal for growing pistachios thanks to its composition rich in minerals. The choice of this district is not accidental: its name, of Arab origin, recalls the profound influence that this culture has had in Sicily, introducing the cultivation of pistachios. Today, pistachios are still harvested by hand, a method that respects nature and allows us to preserve the integrity of the fruit, given that the steep lava terrain makes the use of mechanical means impossible. After harvesting, we move on to hulling, a delicate phase in which we use specific machinery to eliminate the outer skin, followed by the important drying process. The latter is carried out with two traditional methods: Drying in the sun, on large concrete areas called “stindituri”, which guarantees superior quality thanks to natural heat. Or in large greenhouses, for a faster but equally effective solution. Every phase of our work reflects respect for tradition and attention to quality, making our pistachio a product loved and appreciated all over the world.

Traditional Manufacturing Processes

From smallatura to drying, we use traditional techniques refined over time, such as sun drying on “stindituri”. This allows us to guarantee a genuine product, carefully processed to maximize its natural flavor.
