Located in the picturesque district of “Mazzappello Malagà”, our company operates on land of lava origin, ideal for growing pistachios thanks to its composition rich in minerals. The choice of this district is not accidental: its name, of Arab origin, recalls the profound influence that this culture has had in Sicily, introducing the cultivation of pistachios.

Today, pistachios are still harvested by hand, a method that respects nature and allows us to preserve the integrity of the fruit, given that the steep lava terrain makes the use of mechanical means impossible. After harvesting, we move on to hulling, a delicate phase in which we use specific machinery to eliminate the outer skin, followed by the important drying process. The latter is carried out with two traditional methods:

Drying in the sun, on large concrete areas called “stindituri”, which guarantees superior quality thanks to natural heat.

Or in large greenhouses, for a faster but equally effective solution.

Every phase of our work reflects respect for tradition and attention to quality, making our pistachio a product loved and appreciated all over the world.
